Rice-flour Cakes

lb. (250 g.) tepung
beras/rice-flour

1 buah keras/candlenut
(pounded)

1 teaspoon
salt

2 tablespoons roasted
kacang/peanuts (peeled & pounded)

2 3/4 cups lukewarm water

(Mixed, except the
oil)

1/2 coconut (peeled &
grated)

1 1/4 cups pati santan/coconut
cream
-
2 kepulaga/cardamoms
(ground)

a pinch of salt
-
1/4 lb. (125 g.) gula
Jawa/palm sugar

cooking oil for
shallow-frying

Method:
-
Gradually pour water into the rice mixture, stirring
continuously. Blend till smooth.

Stir on low flame
till cooked and very thick.

Add coconut and mix well.
Remove from flame and leave covered for half an hour.

Heat oil. Fry cooked mixture in tablespoonfuls, till
golden brown. Remove and drain. Dish up.

Bring
coconut cream mixture to the boil on high flame,
stirring continuously.

When boiling, reduce heat to low
and stir another 5 minutes. Remove from flame. Dish up.

Serve cakes with the coconut cream.
