Ingredients

2 cups long grain rice
(washed & drained)

2 1/2 cups santan/coconut
milk

1/2 teaspoon salt

3 daun
pandan/Screw pine leaves
Chicken Stew
Ingredients: (ground, except chicken and coconut
milk)

1 chicken (1lb./500
g.) (cleaned & cut into small pieces)

2 1/2 cups santan/coconut
milk
-
2 daun kunyit/turmeric
leaves
-
1 onion
-
2 cloves garlic
-
1 teaspoon ketumber/coriander
seeds
-
1 slice laos/galangal
-
1 stalk serai/lemon
grass (sliced)
-
1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

1 teaspoon sugar
-
1/2 teaspoon salt
Vegetables To Be
Steamed:
-
1/4 lb. (125 g.) kacang
panjang/long beans (sliced)
-
1/4 lb. (125 g.) kubis/cabbage
(shredded)
-
1/4 lb. (125 g.) green
peas
-
1 cup white-grated
coconut
-
1 daun salam/bay leaf
-
1 slice laos/galangal
(crushed)
-
salt to taste
Serves 4
Method:
-
Combine rice, coconut milk, salt and screw pine leaves.
Cook on medium flame till almost done.

Reduce heat and
continue cooking till rice is done. Discard screw pine
leaves and dish up.

To prepare chicken stew. Combine
all the ingredients. Cook gently till gravy is thick.
Adjust seasoning and dish up.

To prepare vegetables.
Combine all the ingredients. Steam till cooked. Dish up.

Serve rice hot with the chicken stew and steamed
vegetables. Garnish as desired.
