Asian Rice, Noodles and Snacks Recipes - Indonesian Savory Glutinous Rice Rolls (Lemper) Recipe

Ingredients

  • 1lb. (500 g.) ketan/glutinous rice (washed & drained)

  • 2 1/2 cups thin santan/thin coconut milk

  • salt to taste

  • banana leaves (steamed, to wrap)

Filling Ingredients:

  • 2 tablespoons cooking oil

  • 1/2 lb. (250 g.) rump steak (minced)

  • 1/4 cup thick santan/thick coconut milk

  • salt to taste

  • 1 tablespoon lime juice

Ground Ingredients:

  • 6 shallots

  • 3 cloves garlic

  • 2 buah keras/candlenuts

  • 2 tablespoons brown sugar

  • 1 teaspoon ketumbar/coriander seeds

  • 1 slice laos/galangal

  • 1 slice kunyit/turmeric root

  • 1/2 inch (1.2-cm.) piece terasi/dried shrimp paste (dry-fried)

Method:

  1. Combine glutinous rice, thin coconut milk and salt. Bring to the boil.

  2. Reduce heat, stir well, then cook covered, till glutinous rice is tender and no liquid is left.

  3. To prepare filling. Heat oil. Stir-fry ground ingredients till golden. Add minced meat. Cook till lightly browned.

  4. Add coconut milk and salt to taste. Stir-cook on medium flame till dry. Remove and add lime juice.

  5. Make equal-sized rolls with glutinous rice. Press each flat, place a little filling on it and fold over to enclose completely. Roll in a piece of banana leaf. Skewer ends with toothpicks.

  6. Steam 15-20 minutes. Transfer to a hot oven (450°F/gas mark 8) and bake 3-5 minutes, to dry completely. Serve hot.
