Asian Rice, Noodles and Snacks Recipes - Indonesian Spiced Rice (Nasi Uduk) Recipe

Ingredients

  • 1 1/2 cups rice (washed & drained)

  • 1 chicken (1lb./500 g.) (cleaned & cut into small pieces)

  • 2 cups santan/coconut milk

  • 2 daun salam/bay leaves

  • salt to taste

  • cooking oil for deep-frying

  • 1 cucumber (sliced)

  • 2 tomatoes (sliced) 

Ground Ingredients:

  • 1 teaspoon ketumbar/coriander seeds

  • 1/2-inch (1.2-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1 stalk serai/lemon grass (sliced)

  • 1 slice laos/galangal

  • 5 shallots

  • 2 cloves garlic

Serves 4


Method:

  1. Combine coconut milk, ground ingredients, salam or bay leaves and salt to taste. Stir-cook on medium flame for 15 minutes.

  2. Add rice to coconut milk-mixture. Cook till all moisture is absorbed and rice is tender. Adjust seasoning, discard leaves, and dish up.

  3. Season chicken with salt to taste. Deep­fry in hot oil till golden and crisp. Remove and drain.

  4. Place chicken on rice. Garnish with cucumber and tomato slices. Serve hot.
