Spiced Rice
(Nasi Uduk) Recipe
Ingredients
-
1 1/2 cups rice (washed
& drained)
-
1 chicken (1lb./500
g.) (cleaned & cut into small pieces)
-
2 cups santan/coconut
milk
-
2 daun salam/bay
leaves
-
salt to taste
-
cooking oil for
deep-frying
-
1 cucumber (sliced)
-
2 tomatoes (sliced)
Ground Ingredients:
-
1 teaspoon ketumbar/coriander
seeds
-
1/2-inch (1.2-cm.)
piece terasi/dried shrimp paste (dry-fried)
-
1 stalk serai/lemon
grass (sliced)
-
1 slice laos/galangal
-
5 shallots
-
2 cloves garlic
Serves 4
Method:
-
Combine coconut milk,
ground ingredients, salam or bay leaves
and salt to taste. Stir-cook on medium flame for 15
minutes.
-
Add rice to coconut milk-mixture. Cook
till all moisture is absorbed and rice is tender.
Adjust seasoning, discard leaves, and dish up.

Season chicken with salt to taste. Deepfry in hot
oil till golden and crisp. Remove and drain.

Place chicken on rice. Garnish with cucumber and
tomato slices. Serve hot.
