Stuffed Pancakes
(Lumpia) Recipe
Ingredients
Filling Ingredients:

2 tablespoons cooking
oil

5 shallots (finely
sliced)

2 cloves garlic (sliced) 4 cloves garlic
and 2 red chilies, pounded
together

1 teaspoon sugar
-
1 chicken (2 lb./1
kg.) (cleaned, boned & minced)

1b. (500 g.) tinned rebung/bamboo shoots (finely shredded)

1 tablespoon taucheo/salted
soy beans (mashed)

salt to taste
Batter Ingredients:
(beaten mixture, except flour)

Method:

To prepare filling. Heat oil and fry shallots, garlic
and pounded ingredients till aromatic.

Add chicken,
bamboo shoots and salted soy beans. Stir. fry till
chicken is tender. Season to taste and remove from
flame. Keep aside.

To prepare batter. Gradually beat
egg-mixture into flour to make a smooth batter.

Heat
a lightly-greased small frying-pan. Make a thin pancake
with some batter.

Put 1 tablespoon filling on half
the pancake. Fold over other half and press edges to
seal. Cook pancake till golden on both sides.

Repeat procedure to use up ingredients. Serve pancakes
warm.
