Vegetable Snack (Rujak Pamekasan) Recipe
Ingredients

1lb. (500 g.) lontong/compressed
rice
-
1 cucumber (sliced in
chunks)
-
1 bangkuang/tumip
(sliced in chunks)
-
4 small green mangoes
(sliced in chunks)
-
4 kacang panjang/long
beans (sliced into equal lengths)
-
1/2 lb. (250 g.) kangkung/water convolvulus (picked & blanched)
-
3 oz. (90 g.) taoge/bean sprouts
(tailed & blanched)
-
2 cakes tempe/fermented
soy beans (sliced & fried crisp)
-
2 cakes tahu/bean curd
(sliced & fried)
-
30 pieces krupuk
singkong/dried vegetable crisps (fried & crushed)
Sauce Ingredients:
-
4 tablespoons petis/wet
shrimp paste
-
1-inch (2.5-cm.) piece
terasi/dried shrimp, ground
-
paste (dry-fried),
ground
-
2 oz. (30 g.) peanuts
(fried), ground
-
6 lombok rawit/bird
chilies, ground
-
salt to taste
-
2 teaspoons sugar
-
4 tablespoons vinegar
Serves 4
Method:
-
Slice compressed rice and arrange on serving plates.
-
Arrange portions of vegetables over the rice. Top with
fermented soy beans and bean curd.

To
prepare
sauce. Blend together all the
ingredients. Adjust seasoning.

Pour sauce over the
rice and vegetables. Sprinkle with vegetable crisps.
Serve.
