Soupy Noodles
(Mee Soup Jawa) Recipe
Ingredients

5 cups water
-
1/2 lb. (250 g.) medium
prawns (shelled & deveined; shells pounded)
-
2 tomatoes (chopped)
-
6 shallots (sliced &
fried)
-
1 tablespoon black
peppercorns (ground)
-
salt to taste
-
a dash of monosodium
glutamate
-
3 oz. (90 g.) kubis/cabbage
(shredded)
-
3 oz. (90 g.) sawi/mustard
greens (chopped)
-
2 oz. (60 g.) taoge/bean sprouts
(tailed)
-
3 red chilies (seeded
& sliced)
-
1 lb. (500 g.) mee
kuning/fresh yellow noodles
-
4 stalks spring onions
(sliced)
-
1 cake tahu/bean curd
(thinly sliced)
Seasoning
Ingredients:
-
2 tablespoons chili
sauce
-
2 tablespoons tomato sauce
-
2 tablespoons light
soy sauce
-
1 tablespoon vinegar
Garnishing
Ingredients:
-
2 eggs (hard-boiled,
shelled & sliced)
-
2 large potatoes
(boiled, peeled & sliced)
-
2 tomatoes (cut into thin
wedges)
Serves 4
Method:
-
Bring water to the boil. Add pounded prawn shells and
the next five ingredients. Simmer 15-20 minutes. Strain.

Bring strained stock to the boil. Add prawns, cabbage
and mustard greens. Cook 1 minute.

Add bean sprouts
and chilies. Stir for 1/2 minute.

Add noodles, spring
onions and bean curd. Stir in seasoning ingredients.
Reduce flame and simmer covered, for 5 minutes.

Adjust seasoning. Remove from flame. Dish up into
individual bowls.

Top with garnishing ingredients. Serve hot.
