Anchovy Sambal (Sambal Ikan Bilis) Recipe
Ingredients

1/4 lb. (125 g.) ikan
bilis/dried anchovies

3 tablespoons cooking oil
-
3/4 cup thick santan/thick coconut milk
-
1 daun jeruk purut/curly lime
leaf
Ground Ingredients:
Serves 6-8
Method:

Clean anchovy
removing heads and central bone. Deep-fry till crisp
and golden. Drain.

Heat oil and stir-fry ground
mixture till oil surfaces.

Add lime leaf and
coconut milk. Simmer till oil separates, then add
fried anchovy.

Adjust seasoning. Remove from
flame. Serve as an accompaniment to a main meal or
with Nasi Lemak or as a Sambal and Pickles dressing.
