Asian Sambal and Pickles Dishes Recipes - Indonesian Anchovy Sambal (Sambal Ikan Bilis) Recipe

Ingredients

  • 1/4 lb. (125 g.) ikan bilis/dried anchovies

  • 3 tablespoons cooking oil

  • 3/4 cup thick santan/thick coconut milk

  • 1 daun jeruk purut/curly lime leaf

Ground Ingredients:

  • 2 onions

  • 8 shallots

  • 4 red chilies

  • 1 clove garlic

  • 1-inch (2.5-cm.) piece terasijdried shrimp paste ( dry-fried)

  • 1 slice kencur/wild ginger

  • 1 slice laos/galangal

  • sugar to taste

Serves 6-8


Method:

  1. Clean anchovy removing heads and central bone. Deep-fry till crisp and golden. Drain.

  2. Heat oil and stir-fry ground mixture till oil surfaces.

  3. Add lime leaf and coconut milk. Simmer till oil separates, then add fried anchovy.

  4. Adjust seasoning. Remove from flame. Serve as an accompaniment to a main meal or with Nasi Lemak or as a Sambal and Pickles dressing.
