Asian Sambal and Pickles Dishes Recipes - Indonesian Bitter Gourd Sambal (Sambal Pria) Recipe

Ingredients

  • 2 bitter gourds

  • 1 1/2 dessertspoons tamarind paste and 1/2 cup water (mixed & strained to extract juice)

Ground Ingredients:

  • 1/4 coconut (grated)

  • 3 shallots

  • 2 cloves garlic

  • 6 red chilies

  • 1 slice laos/galangal

  • salt to taste

Serves 4-6


Method:

  1. Halve bitter gourds lengthwise and scrape out seeds.

  2. Thinly slice diagonally, then boil in salted water till tender. Drain well.

  3. Dry-fry ground ingredients till almost golden.

  4. Place bitter gourd slices in a serving bowl. Pour tamarind juice over.

  5. Top with the fried mixture. Adjust seasoning.

  6. Serve as an accompaniment.
