Bitter Gourd
Sambal (Sambal Pria) Recipe
Ingredients
Ground Ingredients:

1/4 coconut (grated)
-
3 shallots
-
2 cloves garlic
-
6 red chilies
-
1 slice laos/galangal
-
salt to taste
Serves 4-6
Method:
-
Halve bitter gourds lengthwise and scrape out seeds.

Thinly slice diagonally, then boil in salted water
till tender. Drain well.

Dry-fry ground
ingredients till almost golden.
-
Place bitter
gourd slices in a serving bowl. Pour tamarind juice
over.
-
Top with the fried mixture. Adjust
seasoning.

Serve as an accompaniment.
