Candlenut Sambal (Sambal Kemiri) Recipe
Ingredients

3 oz. (90 g.) shelled
buah keras/candlenuts (washed & drained)
-
3 tablespoons cooking
oil
-
12 red chilies
-
1-inch (2.5.cm.)
piece terasi/dried shrimp paste
(dry-fried)
-
6 shallots
-
3 cloves garlic
-
salt & sugar to taste
-
1/4 cup juice of jeruk
nipis/limes
Serves 6
Method:
-
Heat oil and fry
candlenuts, chilies and shrimp paste. Drain out.
-
Grind together all the ingredients, except the lime
juice.
-
Blend the lime juice into the ground
mixture. If it is too thick, add a little more
juice. Adjust seasoning.
-
Serve as an accompaniment to a main meal.
