Asian Sambal and Pickles Dishes Recipes - Indonesian Candlenut Sambal (Sambal Kemiri) Recipe

Ingredients

  • 3 oz. (90 g.) shelled buah keras/candlenuts (washed & drained)

  • 3 tablespoons cooking oil

  • 12 red chilies

  • 1-inch (2.5.cm.) piece terasi/dried shrimp paste (dry-fried)

  • 6 shallots

  • 3 cloves garlic

  • salt & sugar to taste

  • 1/4 cup juice of jeruk nipis/limes

Serves 6


Method:

  1. Heat oil and fry candlenuts, chilies and shrimp paste. Drain out.

  2. Grind together all the ingredients, except the lime juice.

  3. Blend the lime juice into the ground mixture. If it is too thick, add a little more juice. Adjust seasoning.

  4. Serve as an accompaniment to a main meal.
