Asian Sambal and Pickles Dishes Recipes - Indonesian Chilied Eggs (Telur Belada) Recipe

Ingredients

  • 8 eggs

  • cooking oil

  • 2 onions (thinly sliced)

  • 2 cloves garlic (chopped)

  • 1/4 teaspoon dried shrimp paste

  • 1 tablespoon roasted peanuts (coarsely ground)

  • 6 red chilies (seeded & chopped)

  • 2 1/2 cups thick santan/thick coconut milk

  • 2 daun salaml/1 bay leaf

Seasoning Ingredients:

  • 1/2 teaspoon salt

  • 1 tablespoon lemon juice

  • 2 teaspoons gula Jawa/palm sugar

Serves 8


Method:

  1. Hard-boil eggs and shell them. Set aside.

  2. Heat 2 tablespoons oil in a pan and stir-fry onions and garlic till onions are soft.

  3. Add shrimp paste, peanuts and chilies. Fry quickly for a few seconds.

  4. Pour in coconut milk, add seasoning ingredients, salam or bay leaves and eggs.

  5. Lower flame and allow to simmer uncovered, till sauce is thick and oily.

  6. Dish up and serve hot, with rice and Sambal and Pickles.
