Coconut Sambal (Sambal Kelapa) Recipe
Ingredients

1 young coconut
-
3 shallots
-
1 slice kencur/wild
ginger
-
10 red chilies
-
1-inch (2.5-cm.)
piece terasi/dried shrimp paste (dry-fried)
-
salt & sugar to taste
-
1 daun jeruk pumt/curly
lime leaf
Serves 6
Method:
-
Peel coconut and grate. Set aside.
-
Pound together
all the ingredients, except coconut, till fine.
-
Mix coconut into pounded mixture. Steam till mixture
is moist.
-
Serve as an accompaniment.
