Sambal (Sambal Jagung) Recipe
Ingredients

1/4 lb. (125 g.)
fresh corn kernels (dry-fried)

1 dessertspoon
ketumbar/coriander seeds (dry-fried)
-
1 clove garlic
(dry-fried)
-
1 slice kencur/wild
ginger
-
1 onion
-
8 red chilies
-
1-inch (2.5-cm.)
piece terasi/dried shrimp paste (dry-fried)
-
salt and sugar to
taste
-
1 1/2 dessertspoons
tamarind paste and 1/2 cup
water (mixed & strained to
extract juice)
Serves 6
Method:
-
Grind together all the ingredients, except tamarind
juice.

Blend the tamarind juice into the ground
mixture, mixing thoroughly.
-
Serve as an
accompaniment.
