Cucumber
Pickle (Acar Mentah Putih) Recipe
Ingredients

1 cucumber (seeded,
cut into 'fingers' & rinsed)
-
salt to taste
-
10 shallots (peeled &
left whole)
-
5 red chilies
(seeded)
-
2 tablespoons lombok
rawit/bird chilies (left whole)
-
2 cups vinegar
Seasoning
Ingredients:
Serves 6-8
Method:

Rub salt into
cucumber-fingers. Dry in the sun till slightly
shriveled. Rinse well and squeeze to extract excess
juice. Keep aside in a dry place.

Boil vinegar
with the seasoning ingredients. Strain mixture and
allow to cool.
-
Add all the pickle ingredients to
cooled vinegar.
-
Store in a sterilized bottle for
at least 3 days before serving.
