Asian Sambal and Pickles Dishes Recipes - Indonesian Cucumber Pickle (Acar Mentah Putih) Recipe

Ingredients

  • 1 cucumber (seeded, cut into 'fingers' & rinsed)

  • salt to taste

  • 10 shallots (peeled & left whole)

  • 5 red chilies (seeded)

  • 2 tablespoons lombok rawit/bird chilies (left whole)

  • 2 cups vinegar

Seasoning Ingredients:

  • 1/4 teaspoon nutmeg (grated)

  • 3 bunga cengkih/cloves

  • 2 2-inch (5-cm.) kayu manis/cinnamon sticks

  • sugar to taste

  • salt to taste

Serves 6-8


Method:

  1. Rub salt into cucumber-fingers. Dry in the sun till slightly shriveled. Rinse well and squeeze to extract excess juice. Keep aside in a dry place.

  2. Boil vinegar with the seasoning ingredients. Strain mixture and allow to cool.

  3. Add all the pickle ingredients to cooled vinegar.

  4. Store in a sterilized bottle for at least 3 days before serving.
