Asian Sambal and Pickles Dishes Recipes - Indonesian Sambal and Pickles Dressing Sambal (Sambal Lotek) Recipe

Ingredients

  • 3 oz. (90 g.) peanuts (fried and Skinned), pounded

  • 2 oz. (60 g.) dried chilies (fried), pounded 

  • 3 teaspoons sugar

  • 1 1/4 cups hot water & 1 1/4 dessertspoons tamarind paste (mixed & strained to extract juice)

Ground Ingredients:

  • 10 red chilies

  • 2 onions

  • 1-inch (2.5.cm.) piece terasi/dried shrimp paste (dry-fried)

  • salt to taste

  • 1 slice kencur/wild ginger

Serves 4


Method:

  1. Blend together all the ingredients to obtain a thick consistency.

  2. Adjust seasoning. Serve with steamed, boiled or raw Sambal and Pickless or with green sour fruits.
