 Indonesian Fish Sambal (Sambal Lingkung) Recipe

Ingredients

  • 1 lb. (500 g.) ikan tenggiri/Spanish mackerel (steamed, skinned & filleted)

  • 4 tablespoons cooking oil

  • 1 cup pati santan/coconut cream

  • salt & sugar to taste

Ground Ingredients:

  • 1 onion (sliced)

  • 8 shallots

  • 1 clove garlic

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste ( dry-fried)

  • 15 red chilies

  • 5 buah keras/candlenuts

  • 1 slice kencur/wild ginger

  • 1 slice laos/galangal

  • 1 stalk serai/lemon grass (sliced)

  • 2 daun jeruk purut/curly lime leaves

Serves 6-8


Method:

  1. 1. Mash fish-meat and keep aside.

  2. Heat oil and stir-fry ground ingredients till the oil separates.

  3. Add fish and coconut cream, salt and sugar to taste. Stir-cook till the oil separates again and mixture is dry and quite crispy.

  4. Serve hot with boiled white rice and other dishes.
