Sambal (Sambal Lingkung) Recipe
Ingredients
-
1 lb. (500 g.) ikan
tenggiri/Spanish mackerel (steamed, skinned & filleted)
-
4 tablespoons cooking
oil
-
1 cup pati santan/coconut
cream
-
salt & sugar to taste
Ground Ingredients:
-
1 onion (sliced)
-
8 shallots
-
1 clove garlic
-
1-inch (2.5-cm.) piece terasi/dried shrimp paste ( dry-fried)
-
15 red chilies
-
5 buah keras/candlenuts
-
1 slice kencur/wild
ginger
-
1 slice laos/galangal
-
1 stalk serai/lemon
grass (sliced)
-
2 daun jeruk purut/curly
lime leaves
Serves 6-8
Method:
-
1.
Mash fish-meat and
keep aside.
-
Heat oil and stir-fry ground
ingredients till the oil separates.
-
Add fish and
coconut cream, salt and sugar to taste. Stir-cook
till the oil separates again and mixture is dry and
quite crispy.
-
Serve hot with
boiled white rice and other
dishes.
