Fried Prawn
Sambal (Sambal Ebbi) Recipe
Ingredients
-
1 lb. (500 g.) medium
prawns (shelled & deveined)
-
cooking oil for
shallow-frying
-
3 tablespoons extra
oil
-
3 daun salam/1 bay
leaf
-
1 slice laos/galangal
(crushed)
-
salt & sugar to taste
-
5 shallots (sliced)
-
10 red chilies
(halved lengthwise & seeded)
-
2 big onions (sliced &
fried)
Serves 4-5
Method:
-
Heat oil for shallow-frying. Fry prawns till cooked.
Drain and keep aside.

Heat the extra oil. Fry salam or bay leaves and galangal till cooked. Add
salt and sugar.

Add shallots and chilies. Stir
quickly, then mix in prawns and fried onions.
-
Adjust seasoning. Remove from flame. Serve as an
accompaniment.
