Hot and Tangy Sambal (Sambal Asam Pedas) Recipe
Ingredients

1 lb. (500 g.) beef
(cut into small pieces)
-
salt to taste
-
1 dessertspoon water
-
2 daun kunyit/turmeric
leaves
-
1 daun jeruk purut/curly
lime leaf
-
1 tablespoon sesame
oil
-
juice of 16 limau
kasturi/small limes
-
2 jeruk nipis/limes
(cut into wedges)
Ground Ingredients:
-
20 red chilies
-
1 slice laos/galangal
-
2 cloves garlic
-
5 buah keras/candlenuts

Method:
-
Mix well the meat with salt and ground mixture.
Marinate overnight.
-
Pour oil into a casserole. Add seasoned meat and
remaining ingredients, except lime-wedges.
-
Bake
covered in a moderately slow oven, (350°F/gas
mark4) for Ph hours.
-
Keep for a day before
serving. Reheat and garnish with lime-wedges.
-
Serve
as an accompaniment.
