Asian Sambal and Pickles Dishes Recipes - Indonesian Hot and Tangy Sambal (Sambal Asam Pedas) Recipe

Ingredients

  • 1 lb. (500 g.) beef (cut into small pieces)

  • salt to taste

  • 1 dessertspoon water

  • 2 daun kunyit/turmeric leaves

  • 1 daun jeruk purut/curly lime leaf

  • 1 tablespoon sesame oil

  • juice of 16 limau kasturi/small limes

  • 2 jeruk nipis/limes (cut into wedges)

Ground Ingredients:

  • 20 red chilies

  • 1 slice laos/galangal

  • 2 cloves garlic

  • 5 buah keras/candlenuts

Serves 6


Method:

  1. Mix well the meat with salt and ground mixture. Marinate overnight.

  2. Pour oil into a casserole. Add seasoned meat and remaining ingredients, except lime-wedges.

  3. Bake covered in a moderately slow oven, (350°F/gas mark4) for Ph hours.

  4. Keep for a day before serving. Reheat and garnish with lime-wedges.

  5. Serve as an accompaniment.
