Asian Recipes - Indonesian Savory Coconut Sambal (Sambal Poyah) Recipe
Ingredients
1/2 coconut (grate white part only)
5 shallots
1 clove garlic
8 red chilies
1 slice kunyit/turmeric root
1 slice kencur/wild ginger
1/2 teaspoon brown sugar
salt to taste
Serves 6
Method:
Pound together all the ingredients. except the coconut.
Mix the coconut into the pounded mixture. Dry-fry till all the moisture is absorbed.
Grind the fried mixture. Adjust seasoning.
Serve as an accompaniment.
