Asian Sambal and Pickles Dishes Recipes - Indonesian Spiced Sambal (Sambal Pengatin) Recipe

Ingredients

  • 8 red chilies

  • 12 green chilies

  • 2 tablespoons margarine

  • 1 1/2 cups thick santan/thick coconut milk

  • 4 daun salam/2 bay leaves

  • juice of 1/2 jeruk nipis/lime

  • salt to taste

Ground Ingredients:

  • 3 onions (sliced)

  • 3 cloves garlic

  • 2.inch (5.cm.) piece laos/galangal

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

Serves 6


Method:

  1. Seed and slice chilies in long broad strips. Fry lightly in a dry pan then plunge into cold water and soak till ready to cook.

  2. Heat margarine and stir-fry ground mixture till golden. Add salam or bay leaves.

  3. Drain the soaked chilies and add to fried mixture. Mix in lime juice, then coconut milk. Season to taste.

  4. Stir-cook gently till oil separates. Serve hot as an accompaniment.
