Asian Recipes - Indonesian Fish Curry (Pindang Kuning) Recipe
Ingredients
1 lb. (500 g.) fish
3 tablespoons cooking oil
1 cup water
1 1/2 dessertspoons tamarind paste and 1/2 cup water (mixed & strained to extract juice)
salt to taste
Ground Ingredients:
1-inch (2.5-cm.) piece laos/galangal
1 stalk serai/lemon grass (sliced)
a pinch of salt
4 buah keras/candlenuts
5 red chilies
2-inch (5-cm.) piece kunyit/turmeric root
Serves 4
Method:
Clean and bone fish. Cut flesh into convenient pieces.
Heat oil and stir-fry ground ingredients till golden.
Add water and fish-meat. Bring to the boil.
Add tamarind juice and salt to taste. Simmer till oil separates. Remove from flame.
Serve hot with boiled white rice.
