Asian Seafood Recipes - Indonesian Fish Curry (Pindang Kuning) Recipe

Ingredients

  • 1 lb. (500 g.) fish

  • 3 tablespoons cooking oil

  • 1 cup water

  • 1 1/2 dessertspoons tamarind paste and 1/2 cup water (mixed & strained to extract juice)

  • salt to taste

Ground Ingredients:

  • 1-inch (2.5-cm.) piece laos/galangal

  • 1 stalk serai/lemon grass (sliced)

  • a pinch of salt

  • 4 buah keras/candlenuts

  • 5 red chilies

  • 2-inch (5-cm.) piece kunyit/turmeric root

Serves 4


Method:

  1. Clean and bone fish. Cut flesh into convenient pieces.

  2. Heat oil and stir-fry ground ingredients till golden.

  3. Add water and fish-meat. Bring to the boil.

  4. Add tamarind juice and salt to taste. Simmer till oil separates. Remove from flame.

  5. Serve hot with boiled white rice.
