Asian Seafood Recipes - Indonesian Fish Patties (Pergedel Ikan)  Recipe

Ingredients

  • 1lb. (500 g.) fish (cleaned, seasoned & steamed)

  • salt to taste

  • 2 large potatoes (boiled, peeled & mashed)

  • 1 oz. (30 g.) spring onions, chopped

  • 1 oz. (30 g.) daun sup/Chinese celery, chopped

  • 3 green chilies, sliced & pounded

  • 4 shallots, sliced & pounded

  • 1 egg, seasoned & beaten

  • 2 egg-yolks, seasoned & beaten

  • 2 egg-whites (lightly beaten)

  • cooking oil for deep-frying

Serves 6


Method:

  1. Bone the fish. Pound the flesh till fine.

  2. Mix together the fish and remaining ingredients, except egg-white and oil. Blend well and shape into patties.

  3. Dip patties in egg-white.

  4. Heat oil and deep-fry till golden and cooked. Drain well.

  5. Serve hot.
