Fish Patties (Pergedel Ikan) Recipe
Ingredients

1lb. (500 g.) fish
(cleaned, seasoned & steamed)
-
salt to taste
-
2 large potatoes
(boiled, peeled & mashed)
-
1 oz. (30 g.) spring
onions, chopped
-
1 oz. (30 g.) daun
sup/Chinese celery, chopped
-
3 green chilies,
sliced & pounded
-
4
shallots, sliced & pounded
-
1 egg, seasoned & beaten
-
2 egg-yolks, seasoned & beaten
-
2 egg-whites (lightly
beaten)
-
cooking oil for
deep-frying
Serves
6
Method:
-
Bone the fish. Pound the flesh till fine.
-
Mix
together the fish and remaining ingredients, except
egg-white and oil. Blend well and shape into
patties.
-
Dip patties in egg-white.
-
Heat oil
and deep-fry till golden and cooked. Drain well.
-
Serve hot.
