Fish in Soy Sauce (Pindang Kicap) Recipe
Ingredients
-
1 lb. (500 g.) fish
steaks (cleaned)
-
salt to taste
-
10 shallots
-
5 cloves garlic
-
3 green chilies
and 5 red chilies, seeded & sliced lengthwise
-
2 cups water
-
1-.inch (2-5.cm.) piece laos/galangal (crushed)
-
6 daun salam/2 bay leaves
-
2 tablespoons kicap
asin/light soy sauce
-
2 tablespoons kicap
manis/dark soy sauce
Serves 4
Method:
-
Mixed together the light and dark
soy sauce, set aside.
-
Season fish with salt to taste. Leave aside for
10-15 minutes.
-
Bake shallots, garlic and chilies in
hot oven (450°F/gas mark 8) for 10-15 minutes.
-
In
a pan, combine baked ingredients and water. Add
galangal, salam or bay leaves and soy sauce mixture.
-
Season
to taste. Bring to the boil over medium flame.
-
When boiling, add fish. Reduce heat and simmer till
cooked. Adjust seasoning. Remove from flame.

Serve hot with boiled white rice.
