Asian Seafood Recipes - Indonesian Fish in Soy Sauce (Pindang Kicap) Recipe

Ingredients

  • 1 lb. (500 g.) fish steaks (cleaned)

  • salt to taste

  • 10 shallots

  • 5 cloves garlic

  • 3 green chilies and 5 red chilies, seeded & sliced lengthwise

  • 2 cups water

  • 1-.inch (2-5.cm.) piece laos/galangal (crushed)

  • 6 daun salam/2 bay leaves

  • 2 tablespoons kicap asin/light soy sauce

  • 2 tablespoons kicap manis/dark soy sauce

Serves 4


Method:

  1. Mixed together the light and dark soy sauce, set aside.

  2. Season fish with salt to taste. Leave aside for 10-15 minutes.

  3. Bake shallots, garlic and chilies in hot oven (450°F/gas mark 8) for 10-15 minutes.

  4. In a pan, combine baked ingredients and water. Add galangal, salam or bay leaves and soy sauce mixture.

  5. Season to taste. Bring to the boil over medium flame.

  6. When boiling, add fish. Reduce heat and simmer till cooked. Adjust seasoning. Remove from flame.

  7. Serve hot with boiled white rice.
