Asian Seafood Recipes - Indonesian Fish Stew
(Ikan Tumis) Recipe
Ingredients

1lb. (500 g.) fish
steaks (washed & dried)
-
1 tablespoon tamarind
paste
-
3 tablespoons cooking
oil
-
2 medium onions
(finely sliced)
-
3 cloves garlic
(finely sliced)
-
2 red chilies
(seeded & minced)
-
1/2 pt. (300 ml.)
water
-
1 tablespoon kicap
asin/light soy sauce
-
1 teaspoon brown
sugar
-
juice of 1/2 a lime
-
salt to taste
(optional)
Serves 4
Method:
-
Rub tamarind paste over fish steaks.
-
Heat oil and
shallow-fry fish till lightly browned. Remove and
set aside.
-
Add onions, garlic and
chilies to oil
left in pan. Fry till soft.
-
Return fried fish to
pan and add remaining ingredients. Gently shake pan
to mix well.
-
Bring mixture to the boil, lower
flame and simmer about 3 minutes. Remove and serve
hot.
