Asian Seafood Recipes - Indonesian Fish Stew (Ikan Tumis) Recipe

Ingredients

  • 1lb. (500 g.) fish steaks (washed & dried)

  • 1 tablespoon tamarind paste

  • 3 tablespoons cooking oil

  • 2 medium onions (finely sliced)

  • 3 cloves garlic (finely sliced)

  • 2 red chilies (seeded & minced)

  • 1/2 pt. (300 ml.) water

  • 1 tablespoon kicap asin/light soy sauce

  • 1 teaspoon brown sugar

  • juice of 1/2 a lime

  • salt to taste (optional)

Serves 4


Method:

  1. Rub tamarind paste over fish steaks.

  2. Heat oil and shallow-fry fish till lightly browned. Remove and set aside.

  3. Add onions, garlic and chilies to oil left in pan. Fry till soft.

  4. Return fried fish to pan and add remaining ingredients. Gently shake pan to mix well.

  5. Bring mixture to the boil, lower flame and simmer about 3 minutes. Remove and serve hot.
