Asian Recipes - Indonesian Fried Crab (Ketam Goreng) Recipe
Ingredients
1 1/2 lb. (750 g.) large crabs (cleaned & claws separated)
juice of 2 jeruk nipis/limes
1 cup cooking oil
2 big onions (sliced)
3 tablespoons ground chili
salt to taste
1 teaspoon sugar
Serves 4
Method:
Season crabs with salt and juice of 1 lime. Leave aside for 10 minutes.
Heat oil on high flame. Fry crabs till they change color. Drain and keep aside.
Reduce oil to 3 tablespoons. Fry onions and ground chili 3 minutes.
Add salt and sugar. Add crabs. Coat well and stir-fry 3 minutes. Add remaining lime juice. Adjust seasoning.
Remove from flame and serve hot with boiled white rice.
