Asian Seafood Recipes - Fried Fish Balinese-Style (Ikan Bali) Recipe

Ingredients

  • 1 1/2 lb. (750 g.) fish

  • cooking oil for deep-frying

  • 1 tablespoon extra cooking oil

  • 3 shallots (sliced)

  • 1 cup water

  • salt

Sauce Ingredients:

  • 1/2-inch (1-cm.) piece ginger root (finely chopped)

  • 1/2 teaspoon laos/galangal

  • 1 dessertspoon tamarind paste and 3 tablespoons water (mixed & strained  to extract juice)

  • 1 1/2 tablespoons kicap manis/sweet soy sauce

  • 1 teaspoon gula Jawa/palm sugar

  • 2 red chilies (chopped)

  • 1/2 teaspoon terasi/dried shrimp paste

  • 1/2 teaspoon serai/lemon grass

  • salt to taste

Serves 4-5


Method:

  1. Clean fish, cut into serving pieces and season with salt.

  2. Heat oil and deep-fry fish-pieces till golden brown. Drain and arrange on a serving dish.

  3. Heat extra oil in a clean pan and stir-fry shallots till fragrant.

  4. Lower the flame and add the sauce ingredients. Stir-fry 3-4 minutes to mix well.

  5. Add water and simmer till sauce thickens.

  6. Pour sauce over fish and serve hot.
