Asian Seafood Recipes - Indonesian Fried Fish (Ikan Goreng Asam Garam)  Recipe

Ingredients

  • 1 lb. (500 g.) fish (cleaned)

  • 4 teaspoons salt

  • 2 tablespoons tamarind paste water to cover

  • 1 1/2 cups cooking oil

Garnishing Ingredients:

  • 1 sprig daun sup/Chinese celery

  • 1/4 lb. (125 g.) local tomatoes (sliced)

  • 1 jemk nipis/lime (cut into thin wedges)

Serves 4


Method:

  1. If the fish is large, slice it. Score, if small, but leave whole.

  2. Blend salt and tamarind into the water. Soak fish in it for 15 minutes. Drain well.

  3. Heat oil to smoking point. Fry fish till cooked and crispy.

  4. Drain fish. Garnish and serve hot.
