Asian Seafood Recipes - Indonesian Fried Fish in Spicy Gravy (Manggui Ikan)  Recipe

Ingredients

  • 1lb. (500 g.) fish (cleaned)

  • salt to taste

  • juice of 1 jeruk nipis/lime

  • cooking oil for deep-frying

  • 2 onions (sliced)

  • 5 daun salam/2 bay leaves

  • 1-inch (2.5-cm.) piece laos/galangal (crushed)

  • 1-inch (2.5-cm.) terasi/dried shrimp paste (dry-fried), pounded

  • 3 cloves garlic, pounded

  • 5 red chilies (sliced), pounded

  • 1 1/2 cups thick santan/thick coconut milk

  • 1 dessertspoon tamarind paste and 3 tablespoons water (mixed & strained to extract thick juice)

  • salt to taste

Serves 4


Method:

  1. Season fish with salt and lime juice.

  2. Heat oil for deep-frying. Fry fish till cooked and crisp. Drain and keep aside.

  3. In a saucepan, heat 3 tablespoons cooking oil. Add onions, salam or bay leaves, galangal and pounded paste.

  4. When almost golden, add remaining ingredients. Bring to the boil.

  5. Add fish and simmer 2 minutes. Adjust seasoning and remove from heat. Discard salam or bay leaves and galangal.

  6. Serve hot with boiled white rice.
