Gravy
(Manggui Ikan) Recipe
Ingredients
-
1lb. (500 g.) fish
(cleaned)
-
salt to taste
-
juice of 1 jeruk
nipis/lime
-
cooking oil for
deep-frying
-
2 onions (sliced)
-
5 daun salam/2 bay
leaves
-
1-inch (2.5-cm.)
piece laos/galangal (crushed)
-
1-inch (2.5-cm.) terasi/dried shrimp paste
(dry-fried), pounded
-
3
cloves garlic, pounded
-
5 red chilies
(sliced),
pounded
-
1 1/2 cups thick santan/thick
coconut milk
-
1 dessertspoon
tamarind paste and 3 tablespoons water (mixed & strained to extract thick juice)

salt to taste
Serves 4
Method:
-
Season fish with salt and lime juice.
-
Heat oil
for deep-frying. Fry fish till cooked and crisp.
Drain and keep aside.
-
In a saucepan, heat 3
tablespoons cooking oil. Add onions, salam or bay
leaves, galangal and pounded paste.
-
When almost
golden, add remaining ingredients. Bring to the
boil.

Add fish and simmer 2 minutes. Adjust
seasoning and remove from heat. Discard salam or bay
leaves and galangal.

Serve hot with boiled white
rice.
