Asian Seafood Recipes - Indonesian Grilled Fish Wrapped in Banana Leaves (Pepes Ikan)  Recipe

Ingredients

  • 1 lb. (500 g.) fish (cleaned)

  • salt to taste

  • 2 stalks serai/lemon grass (sliced)

  • a few daun salam/bay leaves

  • a few thin slices laos/galangal

  • banana leaves (steamed, to wrap)

  • juice of 2 jeruk nipis/limes

Ground Ingredients:

  • 10 shallots

  • 3 cloves garlic

  • 5 red chilies

  • 4 buah keras/candlenuts

  • 1/4 teaspoon salt

Serves 4-6


Method:

  1. Cut fish into serving pieces and season with salt and the ground ingredients. Place on pieces of banana leaf.

  2. Top with slices of lemon grass, 1 salam or bay leaf, a slice of galangal and sprinkle with lime juice.

  3. Roll up fish in banana leaf and secure ends with lidi sate or toothpicks.

  4. Grill on low heat till cooked. Serve with boiled white rice.
