Grilled Fish Wrapped in Banana Leaves (Pepes Ikan) Recipe
Ingredients
-
1 lb. (500 g.) fish
(cleaned)
-
salt to taste
-
2 stalks serai/lemon
grass (sliced)
-
a few daun salam/bay leaves
-
a few thin slices laos/galangal
-
banana leaves (steamed, to wrap)
-
juice of 2 jeruk
nipis/limes
Ground Ingredients:
-
10 shallots
-
3 cloves garlic
-
5 red chilies
-
4 buah keras/candlenuts
-
1/4 teaspoon salt
Serves 4-6
Method:
-
Cut fish into serving pieces and season with salt
and the ground ingredients. Place on pieces of
banana leaf.
-
Top with slices of lemon grass, 1 salam or bay leaf, a slice of galangal and sprinkle
with lime juice.
-
Roll up fish in banana leaf and secure ends with
lidi sate or toothpicks.
-
Grill on low heat till
cooked. Serve with boiled white rice.
