Asian Seafood Recipes - Indonesian Grilled Wrapped Fish
(Ikan Panggang) Recipe
Ingredients
Marinade
Ingredients: (all mixed in a bowl)

4 cloves garlic
(crushed)

4 red chilies (seeded
& chopped)
-
1/3 teaspoon kunyit/ground turmeric

1
stalk serai/lemon grass (bruised)
-
1/4 teaspoon laos/ground
galangal
-
3 tablespoons lemon
juice
-
1 tablespoon gula Jawa/palm
sugar
-
3 tablespoons kicap asin/soy sauce
Serves 8
Method:
-
Score fish and season
with salt. Marinate for 30 minutes.

Place 1 fish in each
banana leaf or foil. Smear fish with marinade. Place
4 star fruit or lemon slices on top of fish.

Fold
into a packet with seam on top. Retain remaining
marinade for sauce.

Grill fish in a preheated
moderate hot oven (425°F/gas mark 7) for 10
minutes on each side. .Remove.

Add some water to
retained marinade, if necessary. Let marinade simmer
over moderate heat till heated through.

Pour into
sauce bowls. Serve with the grilled fish.
