Asian Seafood Recipes - Indonesian Mackerel Soup (Sup Ikan Tenggiri)  Recipe

Ingredients

  • 1lb. (500 g.) ikan tenggiri (cleaned)

  • 10 cups water

  • 1/2 lb. (250 g.) carrots (peeled)

  • 1 1/2 oz. (45 g.) butter

  • 2 tablespoons flour (sifted)

  • 2 egg-yolks (beaten)

  • 2 oz. (60 g.) daun sup/Chinese celery (chopped)

Seasoning Ingredients:

  • salt to taste

  • Salt, pepper and nutmeg to taste

Serves 4


Method:

  1. Place the fish, water and carrots in a saucepan. Boil slowly for 1h an hour.

  2. Strain and season stock. Debone fish and mash the flesh. Slice carrot into thick pieces.

  3. Melt butter over low heat. Stir in flour, then gradually blend in reserved stock. Remove from flame.

  4. Stir in egg-yolks. Add fish and carrots. Adjust seasoning. Replace on low flame and simmer 1 minute.

  5. Dish up and serve hot, sprinkled with Chinese celery.
