Asian Seafood Recipes - Indonesian Prawn in Coconut Milk (Udang Masak Lemak) Recipe

Ingredients

  • 1 1/4 lb. (625 g.) prawns (shell heads only.)

  • 2 fl. oz. (60 ml.) thin coconut milk

  • 3 fl. oz. (90 ml.) thick coconut milk

  • 1 onion (sliced)

  • 3 cloves garlic (chopped)

  • 1-inch. (2.5-cm.) knob ginger (grated)

  • 3 red chilies (seeded & chopped)

  • 1/2 teaspoon dried shrimp paste

  • 1 teaspoon coriander powder

  • 1/2 teaspoon cumin powder

  • 2 bay leaves

  • cooking oil

Seasoning Ingredients:

  • 1/2 teaspoon salt

  • 1 1/2 tablespoons tamarind juice

  • 1 1/2 teaspoons palm sugar

Serves 4-6


Method:

  1. Heat 3 tablespoons oil in skillet. Sauté bay leaves, garlic, ginger and onion till onion is soft.

  2. Add in prawns and fry till 1/2 cooked.

  3. Add in chilies, shrimp paste, coriander and cumin powder. Fry till color of prawns change.

  4. Stir in thin milk, then thick milk and add seasoning ingredients. Simmer uncovered over low heat till sauce is thickened. Stir all the while.

  5. Dish up and serve.
