Asian Seafood Recipes - Indonesian Prawn in Coconut Milk
(Udang Masak Lemak) Recipe
Ingredients

1 1/4 lb. (625 g.)
prawns (shell heads only.)
-
2 fl. oz. (60 ml.)
thin coconut milk
-
3 fl. oz. (90 ml.)
thick coconut milk
-
1 onion (sliced)
-
3 cloves garlic
(chopped)
-
1-inch. (2.5-cm.)
knob ginger (grated)
-
3 red chilies
(seeded & chopped)
-
1/2 teaspoon dried
shrimp paste
-
1 teaspoon
coriander powder
-
1/2 teaspoon cumin
powder
-
2 bay leaves
-
cooking oil
Seasoning
Ingredients:
Serves 4-6
Method:
-
Heat 3 tablespoons oil in skillet.
Sauté bay leaves,
garlic, ginger and onion till onion is soft.
-
Add
in prawns and fry till 1/2 cooked.
-
Add in chilies,
shrimp paste, coriander
and cumin powder.
Fry till color of prawns change.
-
Stir in thin
milk, then thick milk and add seasoning ingredients.
Simmer uncovered over low heat till sauce is
thickened. Stir all the while.

Dish up and serve.
