Asian Seafood Recipes - Indonesian Prawn Curry (Kallo Udang) Recipe

Ingredients

  • 2 lb. (1 kg.) large prawns

  • 1/2 lb. (250 g.) small potatoes (peeled & parboiled)

  • 1/2 a pineapple (sliced into small pieces)

  • 2 large daun kunyit/turmeric leaf (shredded)

  • 1 daun limau purut/curly lime leaf

  • 2 1/2 cups thick santan/thick coconut milk

  • salt to taste

  • a pinch of sugar

  • 1 dessertspoon tamarind paste and 4 tablespoons water - mixed & strained to extract juice

Ground Ingredients:

  • 5 red chilies

  • 3 green chilies

  • 8 cloves garlic

  • 20 shallots

  • 1-inch (2.5.cm.) piece laos/galangal

  • 2-inch (5-cm.) piece kunyit/turmeric root

  • 2 teaspoons ketumbar/coriander seeds

  • 1 stalk serai/lemon grass (sliced)

  • 6 buah keras/candlenuts

  • 12 dried chilies (soaked & drained)

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

Serves 4-6


Method:

  1. Carefully devein prawns without shelling them.

  2. Mix well together all the ingredients, except prawns and tamarind juice.

  3. Add prawns and stir-cook on medium flame, till gravy is oily and thick.

  4. Add tamarind juice and adjust seasoning. Remove from flame.

  5. Discard leaves. Serve hot with boiled white rice.
