Prawn Curry (Kallo Udang) Recipe
Ingredients

2 lb. (1 kg.) large
prawns
-
1/2
lb. (250 g.) small
potatoes (peeled & parboiled)
-
1/2 a pineapple (sliced
into small pieces)
-
2 large daun kunyit/turmeric
leaf (shredded)
-
1 daun limau purut/curly
lime leaf
-
2 1/2 cups thick santan/thick
coconut milk
-
salt to taste
-
a pinch of sugar
-
1 dessertspoon
tamarind paste and 4 tablespoons water - mixed & strained
to extract juice
Ground Ingredients:
-
5 red
chilies
-
3 green chilies
-
8 cloves garlic
-
20 shallots
-
1-inch (2.5.cm.)
piece laos/galangal
-
2-inch (5-cm.) piece kunyit/turmeric root
-
2 teaspoons ketumbar/coriander
seeds
-
1 stalk serai/lemon
grass (sliced)
-
6 buah keras/candlenuts
-
12 dried chilies
(soaked & drained)
-
1-inch (2.5-cm.)
piece terasi/dried shrimp paste (dry-fried)
Serves 4-6
Method:
-
Carefully devein prawns without shelling them.
-
Mix well together all the ingredients, except prawns
and tamarind juice.
-
Add prawns and stir-cook on
medium flame, till gravy is oily and thick.
-
Add
tamarind juice and adjust seasoning. Remove from
flame.
-
Discard leaves. Serve hot with boiled
white rice.
