Asian Seafood Recipes - Indonesian Seafood Medley
(Sepat Banang) Recipe
Ingredients
-
3 small ikan salem/salmon
(cleaned)
-
15 large prawns
(remove heads but do not shell)
-
3 large terung/brinjals
or aubergines (halved lengthwise)
-
salt to taste
-
lime juice to taste
-
3 unripe mangoes
(peeled, seeded & thinly sliced)
-
2 large tomatoes
(quartered & grilled)
Sauce Ingredients:
-
4 oz. (125 g.) krupuk
ikan/fried fish crackers
-
4 small onions
(peeled & dry-fried)
-
5 lombok rawit/bird
chilies
-
3 buah keras/candlenuts
(dry-fried)
-
1 teaspoon salt
-
1 cup thick santan/thick
coconut milk
-
lime juice to taste
Serves 4-6
Method:
-
Season salmon, prawns and brinjals or aubergines
with salt and lime juice. Grill separately till
cooked.
-
Rub mangoes with salt, then rinse and
keep aside.
-
Arrange all the ingredients in a
serving dish.
-
To
prepare
sauce. Pound together the first
five ingredients. Blend with coconut milk and add
lime juice. Heat through and adjust seasoning. Pour
into a sauce boat.

Serve sauce with the dish of
fish, prawns and vegetables.
