Asian Seafood Recipes - Indonesian Special Prawn Curry
(Sambal Goreng Udang) Recipe
Ingredients

1lb. (500 g.) prawns
-
3 tablespoons cooking
oil
-
6 shallots (sliced)
-
10 oz. (315 g.)
blimbing masam/finger carambola or sour pickles (sliced)
-
2 daun limau pumt/curly
lime leaves
-
1 1/4 cups thick santan/thick
coconut milk
-
salt to taste
-
2 tablespoons fried
onion flakes
Ground Ingredients:
-
12 fresh red
chilies
-
5 buah keras/candlenuts
-
1/2-inch. (1.2-cm.)
piece kunyit/turmeric root
-
3 cloves garlic
-
10 shallots
-
1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)
-
1 teaspoon brown sugar
-
1 slice laos/galangal
-
1 thin stalk serai/lemon
grass (sliced)
Serves 4-6
Method:
-
Shell and devein prawns and rinse thoroughly. Keep
refrigerated.

Heat oil and fry shallots till
golden. Add ground ingredients, carambola and lime
leaves. Stir-fry further till oil separates.

Add
the prawns and cook for 2 minutes. Add coconut milk
and season to taste. Simmer till thick and oil
separates, stirring frequently.

Adjust seasoning
and remove from flame. Discard leaves.

Serve hot,
garnished with fried onion flakes.
