Asian Seafood Recipes - Indonesian Stewed Salt Fish
(Pindang Ikan Asin) Recipe
Ingredients

1/2 lb. (250 g.) dried
salt fish (cleaned & soaked)

3 tablespoons cooking
oil

4 red chilies
(seeded & sliced)

1-inch (2.S-cm.)
piece kunyit/turmeric root (crushed)

1-inch
(2.S-cm.) piece terasi/dried shrimp paste (dry-fried)

2 dessertspoons
tamarind paste and 1/2 cup water (mixed & strained to
extract thick juice)

1 1/2 cups water
-
salt to taste

2 oz. (60 g.) spring
onions (sliced)
Finely-sliced
Ingredients:
Serves 4
Method:

Cut fish into small pieces.

Heat oil and stir-fry
sliced ingredients, chilies, turmeric and dried
shrimp paste.

Add tamarind juice and water.
Season to taste. Bring to the boil and add fish.
Simmer till cooked.

Add spring onions. Remove
from heat.
Serve hot with boiled white rice.
