Asian Seafood Recipes - Indonesian Stuffed Prawns
(Udang Brengkes) Recipe
Ingredients
Ground Ingredients:
-
4 red chilies
-
2 buah keras/candlenuts
-
2 oz. (60 g.) cashew
nuts
-
1/2-inch (1.2-cm.)
piece kunyit/turmeric
-
1 slice laos/galangal
-
1/2-inch (1.2-cm.)
piece terasi/dried shrimp paste (dry-fried)
-
2 cloves garlic
-
12 shallots
-
1 teaspoon peppercorns
-
1 teaspoon sugar
-
1 tablespoon rice
flour
Serves 4
Method:
-
Heat oil and fry ground ingredients till aromatic
and thick. Drain oil and put fried ground
ingredients aside. Mix oil with lime juice.
-
Cut
off prawn whiskers. Clean out sand sack at back of
head. Pullout vein from neck. Leave head and body
intact. Slit opening in stomach.
-
Season well with
salt to taste. Stuff stomachs with ground
ingredients. Pass a skewer through prawn from head
to tail.

Grill over or under low heat. Baste with
mixture of oil and lime juice.

Remove skewers,
garnish and serve hot.
