Asian Seafood Recipes - Indonesian Sweet Sour Fish
(Ikan Masam Manis) Recipe
Ingredients
-
1 fish (3lb./1 1/2 kg.)
(cleaned)
-
salt to taste
-
juice of 1 jeruk nipis/lime
-
1 cup corn-flour
-
cooking oil for
deep-frying
-
2 oz. (60 g.) spring
onions (sliced)
Sauce Ingredients:
-
6 shallots (sliced)
-
3 cloves garlic
(sliced)
-
3 slices ginger root
(minced)
-
3 fresh red
chilies
(seeded & sliced)
-
3 tomatoes (chopped)
-
2 tablespoons tomato
sauce
-
1 dessertspoon
chili
sauce
-
1 teaspoon oil
-
2 dessertspoons
vinegar
-
1 teaspoon sugar
-
1 cup water
-
1 dessertspoon
corn-flour blended with 2 tbsp water
Serves 4-6
Method:
-
Season fish with salt and lime juice and coat with
corn flour.
-
Heat oil for deep-frying. Deep-fry fish
till crisp and golden. Drain and put on a serving
plate.
-
To prepare sauce. Reduce the same oil to 3
tablespoons. Fry shallots, garlic and ginger till
shallots are soft.
-
Add remaining ingredients,
except corn-flour paste. Stir-cook for 4 minutes then
bring to the boil.

Stir in corn-flour paste.
Simmer, stirring, till sauce thickens. Adjust
seasoning and remove from flame.

Pour sauce over
fish and sprinkle with spring onions. Serve hot, with boiled white rice.
