Asian Seafood Recipes - Indonesian Sweet Sour Fish (Ikan Masam Manis) Recipe

Ingredients

  • 1 fish (3lb./1 1/2 kg.) (cleaned)

  • salt to taste

  • juice of 1 jeruk nipis/lime

  • 1 cup corn-flour

  • cooking oil for deep-frying

  • 2 oz. (60 g.) spring onions (sliced)

Sauce Ingredients:

  • 6 shallots (sliced)

  • 3 cloves garlic (sliced)

  • 3 slices ginger root (minced)

  • 3 fresh red chilies (seeded & sliced)

  • 3 tomatoes (chopped)

  • 2 tablespoons tomato sauce

  • 1 dessertspoon chili sauce

  • 1 teaspoon oil

  • 2 dessertspoons vinegar

  • 1 teaspoon sugar

  • 1 cup water

  • 1 dessertspoon corn-flour blended with 2 tbsp water

Serves 4-6


Method:

  1. Season fish with salt and lime juice and coat with corn flour.

  2. Heat oil for deep-frying. Deep-fry fish till crisp and golden. Drain and put on a serving plate.

  3. To prepare sauce. Reduce the same oil to 3 tablespoons. Fry shallots, garlic and ginger till shallots are soft.

  4. Add remaining ingredients, except corn-flour paste. Stir-cook for 4 minutes then bring to the boil.

  5. Stir in corn-flour paste. Simmer, stirring, till sauce thickens. Adjust seasoning and remove from flame.

  6. Pour sauce over fish and sprinkle with spring onions. Serve hot, with boiled white rice.
