Asian Sweets and Cakes Recipes - Indonesian Banana Sweet (Pengat Pisang Ubi) Recipe

Ingredients

  • 1/2 lb. (250 g.) sweet potatoes (peeled & cubed)

  • 1 cup sugar

  • 4 cups santan/coconut milk mixed with 1/2 teaspoon salt

  • 5 daun pandan/Screwpine leaves

  • 1/2 lb. (250 g.) ripe bananas (peeled & sliced)

  • 1/2 lb. (250 g.) gula Jawa/palm sugar (chopped)

  • 1 cup thick santan/thick coconut milk

Serves 4-6


Method:

  1. Boil together the sweet potatoes, sugar, coconut milk and Screw pine leaves, till sweet potatoes are cooked.

  2. Add bananas and palm sugar. Boil till the sugar melts, stirring carefully.

  3. Add thick coconut milk. Bring to the boil, stirring. Rem0ve from flame. Discard Screw pine leaves.

  4. Serve warm or cold, in individual bowls.
