Banana Sweet
(Pengat Pisang Ubi) Recipe
Ingredients

1/2 lb. (250 g.) sweet
potatoes (peeled & cubed)

1 cup sugar
-
4 cups santan/coconut milk
mixed with 1/2 teaspoon salt
-
5 daun pandan/Screwpine
leaves
-
1/2 lb. (250 g.) ripe bananas
(peeled & sliced)

1/2 lb.
(250
g.) gula Jawa/palm
sugar (chopped)

1
cup thick santan/thick coconut milk
Serves 4-6
Method:
-
Boil together the sweet potatoes, sugar,
coconut milk and Screw pine leaves, till sweet
potatoes are cooked.
-
Add bananas and palm sugar.
Boil till the sugar melts, stirring carefully.
-
Add thick coconut milk. Bring to the boil, stirring.
Rem0ve from flame. Discard Screw pine leaves.
-
Serve warm or cold, in individual bowls.
