Dumplings in Coconut with Syrup
(Kuih Biji Salad) Recipe
Ingredients

1
cup ketan flour/glutinous rice flour
-
1/2 cup corn-flour
-
1/2
cup water and 1 teaspoon
salt, dissolved

a scant 1/4 cup air kapur sireh/slaked lime solution
-
1 cup gula Jawa/palm
sugar,
1 1/2 cups
water and 2 daun pandan/Screw pine
leaves (cut),
boiled & strained
-
1 coconut (grate
white part Only)
-
salt to
taste
Serves 4
Method:
-
Mix together the two types of flour. Make
a well in the centre and gradually add salted water
and slaked lime solution. Mix to a pliable dough.
-
Knead well. Shape into a long roll. Slice at an
angle into equally-thick pieces.

Bring a saucepan
of water to the boil. Cook pieces of dough in the
boiling water. Remove from water and drain.
-
Roll
cooked dumplings in grated coconut and arrange on a
serving plate. Serve with the palm sugar syrup.
