Asian Sweets and Cakes Recipes - Indonesian Glutinous Rice Sweet (Jipang) Recipe

Ingredients

  • 1lb. (500 g.) beras ketan/glutinous rice (washed & drained)

  • 1/2 lb. (250 g.) sugar

  • 1/2 lb. (250 g.) brown sugar

  • margarine, to grease

Serves 8


Method:

  1. Dry-fry glutinous rice over low flame till nearly golden. Keep aside.

  2. Make a very thick syrup with both types of sugar.

  3. Add the roasted rice to the syrup. Stir till well-mixed and the mixture holds together. Remove from flame.

  4. Transfer mixture to a greased shallow mould. Pack in tightly and weight down with a heavy weight for 20 minutes.

  5. Cut into squares while still warm. Serve.
