Asian Sweets and Cakes Recipes - Indonesian Pudding with Fruit Sauce (Pudding Dengan Saus Buah) Recipe

Ingredients

  • 1 oz. (30 g.) agar-agar/seaweed gelatine (soaked, drained & cut into small pieces)

  • 5 ripe bananas (peeled & sliced), juice of 1 jeluk nipis/lime and 1 tablespoon castor sugar (mixed)

  • 3 cups water

  • 3 cups thick santan/thick coconut milk

  • a pinch of salt

  • sugar to taste

  • 1 teaspoon vanilla essence

Sauce Ingredients:

  • 1 ripe durian belanda/soursop (2 lb./1 kg.) (peeled, seeded & mashed)

  • 3 cups water

  • 1/2 cup sugar

  • 2 tablespoons corn-flour

Serves 8


Method:

  1. Combine seaweed gelatine, banana mixture and water. Bring to the boil. Reduce heat to low.

  2. Add coconut milk, stirring vigorously. Add salt and sugar. Simmer, stirring, till thick and cooked.

  3. Remove from flame and add vanilla. Pour into a rinsed mould. Cool and chill till set. Serve with the sauce.

  4. To prepare sauce. Squeeze durian belanda till all the juice is extracted. Add water. Blend, then strain.

  5. Add sugar and corn-flour mixture. Bring to the boil over low flame, stirring continuously. Remove from flame. Cool and dish up.
