Asian Sweets and Cakes Recipes - Indonesian Sago Pudding (Pudding Sago) Recipe

Ingredients

  • 1/4 teaspoon salt

  • scant 2/3 cup thick santan/thick coconut milk

  • 10 oz. (315 g.) sagu/sago (washed & drained)

  • water to cover

  • 1 cup grated gula Jawa/palm sugar mixed with 1 cup water

Serves 4


Method:

  1. Dissolve salt in coconut milk and chill.

  2. Combine sago and water. Boil till sago becomes clear.

  3. Remove from flame and drain through a sieve. Rinse under a running tap to remove excess starch.

  4. After 1 minute, drain sago well. Pack into rinsed individual moulds and refrigerate to set.

  5. Bring to the boil the palm sugar mixture. Simmer over low heat till sugar dissolves, stirring often. When syrup thickens, remove and cool.

  6. Un-mould sago pudding onto dessert plates. Serve with chilled coconut milk and palm sugar syrup.
