Asian Sweets and Cakes Recipes - Indonesian Steamed Pudding in Screwpine Leaves (Kuih Anak China) Recipe

Ingredients

  • 2 cups thick santan/thick coconut milk

  • 1 cup sugar

  • 1 1/4 cups water

  • 1 cup ketan flour/glutinous rice flour

  • daun pandan/Screwpine leaves (to make sachets)

Serves 4


Method:

  1. Bring coconut milk to the boil over low flame. Stir continuously. Remove from flame.

  2. Make syrup with sugar and water. Strain.

  3. Blend together the glutinous rice flour, cooked coconut milk and syrup. Pour into a flat mould. Steam till cooked.

  4. Make small, square sachets with the pandan leaves.

  5. Cut the steamed cake into square pieces to fit the sachets. Place a piece of cake in each and seal. Serve.
