Pudding in Screwpine Leaves
(Kuih Anak China) Recipe
Ingredients
-
2 cups thick santan/thick
coconut milk
-
1 cup sugar
-
1 1/4 cups water
-
1 cup ketan
flour/glutinous rice flour
-
daun pandan/Screwpine
leaves (to make sachets)
Serves 4
Method:
-
Bring coconut milk to the boil over low flame. Stir
continuously. Remove from flame.

Make syrup with
sugar and water. Strain.
-
Blend together the glutinous
rice flour, cooked coconut milk and syrup. Pour into a
flat mould. Steam till cooked.

Make small, square
sachets with the pandan leaves.
-
Cut the steamed cake into square pieces to
fit the sachets. Place a piece of cake in each and seal.
Serve.
