Sweet Tapioca Crisps
(Kerepek Ubi Bergula) Recipe
Ingredients

1 1/2lb. (750 g.) ubi
kayu/tapioca (peeled)

cooking oil for deep-frying

1/2 lb. (250 g.)
brown sugar

1/2 cup water
Serves 8
Method:
-
Slice tapioca into
small, thin pieces. Dry in the sun for 1h hour.

Heat oil and deep-fry them till crisp and cooked.
Drain well.

Place the sugar in a clean, dry pan.
Add water.
-
Bring to the boil. Stir, over medium
flame till dissolved.
-
Add fried tapioca crisps.
Stir-cook till well coated in the syrup.

Cool well before storing in airtight containers.
