Asian Sweets and Cakes Recipes - Indonesian Sweet Tapioca Crisps (Kerepek Ubi Bergula) Recipe

Ingredients

  • 1 1/2lb. (750 g.) ubi kayu/tapioca (peeled)

  • cooking oil for deep-frying

  • 1/2 lb. (250 g.) brown sugar

  • 1/2 cup water

Serves 8


Method:

  1. Slice tapioca into small, thin pieces. Dry in the sun for 1h hour.

  2. Heat oil and deep-fry them till crisp and cooked. Drain well.

  3. Place the sugar in a clean, dry pan. Add water.

  4. Bring to the boil. Stir, over medium flame till dissolved.

  5. Add fried tapioca crisps. Stir-cook till well coated in the syrup.

  6. Cool well before storing in airtight containers.
