Asian Vegetable Dishes Recipes - Indonesian Beansprouts with Chilies (Tumis Taoge Dengan Lombok) Recipe

Ingredients

  • 1/2 lb. (250 g.) taoge/beansprouts (tailed & washed)

  • 1/4 lb. (125 g.) large red chilies (sliced)

  • 3 tablespoons cooking oil

  • 1/2-inch (1.2.cm.) piece laos/galangal (crushed)

  • 6 shallots, pounded

  • 2 cloves garlic, pounded                                                

  • 1/2-inch (1.2-cm.) piece terasi/dried, pounded

  • shrimp paste (dry-fried), pounded   

  • 1/2 lb. (250 g.) prawns (shelled, deveined & seasoned)

  • salt to taste

  • 1/4 cup water

Serves 4


Method:

  1. Heat oil and stir-fry chilies, galangal and pounded ingredients till golden.

  2. Add prawns and stir-fry 1/2 a minute.

  3. Add beansprouts and simmer till tender­crisp. Add water and season to taste.

  4. Cook covered, on low flame, 1/2 a minute. Remove from flame. Discard galangal.

  5. Serve hot with boiled white rice.
