Asian Vegetable Dishes Recipes - Indonesian Spinach with Corn (Sayur Menir) Recipe

Ingredients

• 1lb. (500 g.) bayam/spinach

• 6-8 whole young corn

• Ph cups water

• salt to taste

• a pinch of sugar

• 1 large onion (sliced)

• 1-inch (2.5.cm.) piece laos/galangal

Serves 4-6

Method:

1. Pick leaves of spinach and cut the stalks to shorter lengths. Cut com to shorter lengths, if necessary.

2. Bring water to the boil on medium flame. Add salt, sugar, onion and galangal.

3.  Add com and cook till tender.

4. Reduce heat to low. Add spinach and simmer I1h minutes. Adjust seasoning. Remove from heat.

5. Discard galangal. Serve hot with boiled white rice.
