Asian Vegetable Dishes Recipes - Indonesian Stewed Bamboo Shoots (Tumis Rebung) Recipe

Ingredients

  • 1/2 lb. (250 g.) rebung/bamboo shoots

  • 2 tablespoons cooking oil

  • 3 cloves garlic (sliced)

  • 8 shallots (sliced)

  • 4 red chilies (sliced)

  • 1/2 lb. (250 g.) prawns (shelled & deveined)

  • 1 1/2 cups santan/coconut milk

  • 1.inch. (2.5.cm.) piece terasi/dried shrimp paste

  • salt to taste

  • 2 daun salam/1 bay leaf

  • 1.inch (2.5-cm.) piece laos/galangal (crushed)

  • 4 eggs (hardboiled & shelled)

Serves 4-6


Method:

  1. Slice bamboo shoots into convenient pieces and boil till tender. Drain.

  2. Heat oil and fry garlic and shallots till golden.

  3. Add chilies and prawns and stir-fry till cooked.

  4. Add coconut milk, shrimp paste, salt, salam or bay leaves and galangal. Bring to the boil, stirring quickly.

  5. Add boiled bamboo shoots and eggs. Stir-cook till the oil separates. Adjust seasoning. Discard salam or bay leaves and galangal.

  6. Remove from flame. Serve hot with boiled white rice.
