Stewed Bamboo Shoots (Tumis Rebung) Recipe
Ingredients

1/2 lb. (250 g.) rebung/bamboo
shoots
-
2 tablespoons cooking
oil
-
3 cloves garlic
(sliced)
-
8 shallots (sliced)
-
4 red chilies
(sliced)
-
1/2 lb. (250 g.) prawns
(shelled & deveined)
-
1 1/2 cups santan/coconut
milk
-
1.inch. (2.5.cm.)
piece terasi/dried shrimp paste
-
salt to taste
-
2 daun salam/1 bay
leaf
-
1.inch (2.5-cm.) piece
laos/galangal (crushed)
-
4 eggs (hardboiled &
shelled)
Serves 4-6
Method:
-
Slice bamboo shoots into convenient pieces and boil
till tender. Drain.
-
Heat oil and fry garlic and shallots till golden.
-
Add chilies and prawns and stir-fry till cooked.
-
Add coconut milk, shrimp paste, salt, salam or bay
leaves and galangal. Bring to the boil, stirring
quickly.
-
Add boiled bamboo shoots and eggs.
Stir-cook till the oil separates. Adjust seasoning.
Discard salam or bay leaves and galangal.
-
Remove from flame. Serve hot with boiled white rice.
