Asian Vegetable Dishes Recipes - Indonesian Stewed French Beans (Sayur Oseng Oseng) Recipe

Ingredients

  • 3/4 lb. (375 g.) French beans

  • 4 tablespoons cooking oil

  • 1-inch (2.5.cm.) piece laos/galangal (crushed)

  • 4 daun salam/2 bay leaves

  • 1 teaspoon gula Jawa/palm sugar

  • 1 dessertspoon salt

  • 1-inch (2.5-cm.) piece terasi/dried

  • shrimp paste (dry-fried)

  • 3 buah keras/candlenuts

  • 1 cup water

Finely-sliced Ingredients:

  • 3 big onions

  • 3 cloves garlic

  • 6 red chilies

Serves 4-6


Method:

  1. String French beans and slice diagonally into fairly thin pieces.

  2. Heat oil and stir-fry pounded and sliced ingredients.

  3. Add galangal, salam or bay leaves and French beans.

  4. Add water and stew till just cooked.

  5. Adjust seasoning and remove from flame. Discard galangal and salam or bay leaves.

  6. Serve hot with boiled white rice.
