Asian Vegetable Dishes Recipes - Indonesian Stewed Pumpkin (Tumis Labu Air) Recipe

Ingredients

  • 1 lb. (500 g.) pumpkin

  • 3 tablespoons cooking oil

  • 3 cloves garlic (sliced)

  • 3 onions (sliced)

  • 5 red chilies (sliced)

  • salt to taste

  • 1-inch (2.5-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 2 daun salam/1 bay leaf

  • 1-inch (2.5-cm.) piece laos/galangal (crushed)

  • 1/2 lb. (250 g.) prawns (shelled & deveined)

  • 1 1/2 cups santan/coconut milk

  • 1 dessertspoon tamarind paste and 1/4 cup water (mixed & strained to extract juice)

Serves 4-6


Method:

  1. Peel pumpkin and thinly slice into 2-inch (5-cm.) squares.

  2. Heat oil and fry garlic and onions till golden.

  3. Add chilies, salt, shrimp paste, salam or bay leaves and galangal. Stir-fry till oil is reddish.

  4. Add prawns and simmer till cooked. Add coconut milk and tamarind juice.

  5. Add pumpkin and stir-cook till tender. Adjust seasoning.

  6. Remove from flame. Discard salam or bay leaves and galangal.

  7. Serve hot with boiled white rice.
